This is a must! You can not use Kikkoman or regular walmart store soy sauces. It has a completely different flavor profile! I have made Chinese take out at home continually and this is the best. Also you must have both, light and dark! Light doesnnot mean dietary in any way.. it means color! Dark is a little sweeter and thicker for that look and flavor. I have copied takeout exactly. Japanese soy won't work either. Must be Chinese.
